Chalupa a la crockpot |
Serves a crowd. |
Ingredients:

4 | lb. | pork loin roast (trim excess fat) |
1 | lb. | pinto beans (dry, unsoaked) |
2 | cloves | garlic, chopped (more if you want) |
2 | Tbsp. | good dark chile powder |
2 | Tbsp. | cumin |
2 | small | cans green chile (suit your taste, I use 2), or |
6 | frozen | whole green chiles |
1 | Tbsp. | salt |
1/2 | tsp. | dried oregano |

Method: |
Put all ingredients in crockpot. Cover beans with water. |
Cook on low 8-10 hours. |
Take out bones and break up meat. |
Serve in bowls (over corn chips if you like), and top with any or all of the following: |
grated sharp cheese, chopped onion, shredded lettuce, diced tomatoes, avocados, salsa, ripe olives... |
